Organic extra virgin olive oil, blend of tuscan cultivars: Frantoio, Leccino, Moraiolo e Pendolino.
It has a good olfactory complexity with decisive vegetal hints of green olive. That returns in the taste with a well-balanced bitter and spicy finish, in a notable harmony.
The harvest type is manual and with facilitators, the olives are harvested according to the optimal ripeness of each single variety and are placed in aerated boxes kept in the shade until transport to the mill every evening to preserve their integrity.
It’s ideal in slightly sweet soups, such as chickpea and prawn or onion soup. It’s also perfect for a homemade mayonnaise and suitable as raw seasoning for fish such as tuna, sea bass or steamed fish. Delicious also in biscuits recipes and sweets in general.
