In the Vineyard
The vineyards, approximately 30-35 years old, are located in the Pitigliano area on volcanic soils at an altitude of about 300 meters above sea level. The training system is vertical shoot positioning with Guyot pruning, using single or double fruiting canes. Cultivation practices follow the Corino Method, a plant-based closed-cycle regenerative agriculture, with particular focus on preserving soil productivity and plant longevity. Periodic mulching is carried out under the rows using hay produced on the estate. The vineyard vegetation is arranged on supports without topping, aiming to extend leaf activity until late in the season.
In the Cellar
The grapes were crushed and fermentation occurred with native yeasts, with periodic punch-downs starting approximately 48 hours after placing the must in vats. During fermentation, only periodic punch-downs were performed. Maceration lasted for 3 weeks, after which the wine, including the portion from soft pressing of the pomace, was transferred to wooden barrels for about 5 months. No invasive oenological interventions were performed, nor were any additives added, including SO2. The 2023 vintage was characterized by an unusual amount of rainfall in April, May
and June (about 500 mm) occurring almost daily, causing serious difficulties in vineyard management. The season was then cut short due to two severe hailstorms on May 11 and 25, which seriously damaged the vines and resulted in a loss of almost 90% of production. The vines recovered quickly, testament to the good health of our ecosystem. The Procanico and Trebbiano harvest was carried out in the second half of September, yielding a small quantity of wine to symbolically represent the vintage.
The harvest is a fundamental moment for obtaining our wines and is carried out through rigorous manual grape selection.
