In the Vineyard
The vineyards, at approximately 300 meters above sea level, were planted between 2009 and 2014 with a prevalence of different Sangiovese biotypes on volcanic soils. The training systems are espalier with pruning, bush vines, and guyot. The main vine trunk is carefully pruned to produce 3-4 shoots, forming a radial bush arrangement. Cultivation practices follow the Corino Method, a plant-based biodynamic approach, with particular attention to soil quality and plant longevity, including mulching with hay produced on the estate. The vineyard vegetation is arranged on supports without topping, aiming to extend leaf activity until late season. The 2019 vintage was distinguished primarily by one peculiarity: May was very generous with rainfall. The average air temperatures in May were well below the long-term seasonal averages. June recorded a rapid and significant increase in temperatures, which continued even more so in July. The vegetation in the vineyards was lush. The regularity in ripening in terms of sugar synthesis came promptly; conversely, phenolic maturity was achieved with a delay, and the harvest waiting time was fundamental to obtain clusters with complete accumulation. The harvest days were optimal, with good temperature variation, high luminosity, and no rain interruptions. The harvest is a fundamental moment for obtaining our wines and is carried out through rigorous manual grape selection.
In the Cellar
The grapes were crushed and fermentation occurred through natural local yeasts. During fermentation, only periodic punch-downs were performed starting 48-64 hours after placing the must in the vats. Maceration continued for four weeks, after which the wine evolved in wooden barrels for about 18 months. No invasive interventions or additives were used.
