In the Vineyard

The vineyards are located between 300 and 320 meters above sea level, aged between 10 and 60 years, with a mix of Italian and historic Maremma grape varieties. The predominant grape is Ciliegiolo, followed by populations of Sangiovese; less common red varieties like Cannonau grigio are also present. The training system is the espalier with mixed pruning of double arch and bush vine. Cultivation practices are carried out according to the Corino Method, a regenerative closed-cycle plant-based agriculture, with a particular focus on preserving the soil’s productive capacity and the longevity of the plants. Periodic mulching is also performed in the under-row with hay produced on the farm. The vineyard vegetation is arranged on supports without topping, aiming to prolong leaf activity until late in the season. The 2022 vintage was marked by drought starting as early as the winter months, exacerbated by unusually high temperatures over 30 degrees from the first days of May, a combination that led to the failure of many blooms. Temperatures remained high continuously until mid-August. Rains from August 20 to mid-September ensured a physiological recovery of the plants and optimal ripening. The harvest of red grape varieties took place gradually from early September until the third week. The harvest is a crucial moment for obtaining our wines and is carried out through a rigorous manual selection of the grapes.

In the Cellar

The grapes were crushed, and fermentation occurred with the natural yeasts of the area. During fermentation, only periodic punch-downs were performed starting about 48 hours after placing the musts in the vats. Maceration lasted for 4 weeks, after which the wine, including the part derived from gentle pressing of the pomace, was transferred to wooden barrels for about 20 months. No enological interventions or additives, including SO2, were used.

The Wine

La Maliosa Saturnalia red is mainly obtained from a second selection of Ciliegiolo, Sangiovese, and Cannonau grigio grapes, with the addition of wine from gentle pressing. The alcohol content is 14%.

Tasting Notes

The color is ruby red with garnet reflections. On the nose, there is a predominance of red fruits, cherry, blackberry. Notes of withered rose, humus, and black pepper. On the palate, medium structure, long persistence, and balanced tannins. Good acidity and broad aftertaste.

Gastronomic Pairings

We suggest it for a wide range of pairings, including: first courses with white or red ragù, grilled white meats, or roasted red meats. Excellent with medium-aged cheeses and cured meats. We also recommend pairing it with a fish soup.
