In the Vineyard

The vineyards, about 30-35 years old, are located in the Pitigliano area on volcanic soil at 300 m.a.s.l.
The training system is the espalier with guyot pruning. The cultivation is done according to the
“Metodo Corino”, an exclusively vegetal closed cycle regenerative agriculture, with particular attention to
the quality of the soil and the longevity of the plants; mulching with hay produced in the farm is periodically
applied. The vegetation of the vines is arranged without topping and trying to prolong the foliar activity until
late in the season.
The 2024 vintage was characterized by a cool and rainy climate, with below-average temperatures and
late ripening. Thanks to our production philosophy – which favors vines that are perfectly integrated into
their environment and not subjected to invasive agronomic interventions – we were able to effectively
manage the season’s climatic challenges. The resulting wines have a low alcohol content, medium
structure, and a fresh, pleasant flavor profile that enhances their drinkability. The Procanico harvest was
carried out in the second half of September.
The harvest is a fundamental moment for our wines and it is carried out through a rigorous manual
selection of the grapes.

In the Cellar

The grapes were crushed, and fermentation occurred with natural local yeasts; during fermentation, only periodic punch-downs were performed. Maceration lasted for 3 weeks, after which the wine evolved in wooden barrels for about 7 months. No enological interventions or additives were added.

The Wine

La Maliosa Uni is obtained exclusively from the selection of the best Procanico grapes. The total sulfur dioxide values are below 20 mg/l, and the alcohol content is 12.5%.

Tasting Notes

The color is pronounced yellow tending towards ochre. On the nose, you perceive fruit ripened in the heat, combined with floral notes, saffron, and cumin. The tertiary aromas are complex, ranging from bark to incense, offering surprising returns reminiscent of honey and the warm summer nature. On the palate, it is vibrant, full, and structured. It expresses a refined tannic side that interacts with softness. The fruity and floral notes evoke the sensation of a summer field, full of fragrance and energy. The sapidity is surprising and enhances the complexity, persistence, and body, offering the taster intense emotions. A slight bitter note in the finish.

Gastronomic Pairings

We suggest pairing with warm seafood appetizers; fresh egg pasta; fried fish and cod; meats, including red; medium-aged cheeses. Try with a crumble of cantucci and zabaione when well aerated and with creamy desserts.

La Maliosa Uni is a living wine, constantly evolving, we recommend taking the time to enjoy its transformations. We suggest airing the wine for a few minutes before tasting.

Notes

As no animal products are used either in the vineyard or in the cellar, La Maliosa wine is also suitable for those following a vegetarian and vegan diet.
